A switched-on Commis Chef is needed for a large restaurant based in the heart of Sidcup. Our client is a large restaurant who offer locally sourced ingredients, cooked fresh every day and are open seven days a week for breakfast, lunch and afternoon tea. They offer delicious, freshly prepared meals including toasted sandwiches, Sunday roasts, and stone-baked pizzas.
Working as a Commis Chef you will support the Sous Chef in ensuring the kitchen delivers the highest quality food in terms of taste and presentation. You will prepare, cook, present and maintain all food under the instruction of the Sous Chef.
Key Accountabilities - what are the day to day duties
*To believe in and adhere to the Staff Charter
*To wear clean correct uniform and appropriate footwear at all times
*To attend the daily team brief
*To carry out tasks allocated by the Sous Chef and to develop knowledge and skills under their instruction
*To ensure all food in your allocate area is prepared promptly and correctly and delivered on time to the correct station ready to be served
*Ensure that all work areas and equipment are kept clean and tidy at all times
*Ensure all food is correctly labelled
*Ensure that all food is correctly stored, ensuring correct stock rotation and minimising kitchen wastage
*Ensure all wastage is kept to a minimum and correctly documented
*Carry out and document all fridge temperatures daily
*Carry out and complete all daily cleaning sheets
*Ensure any handover is completed at the end of every day to the Sous Chef
*Be open to positive and constructive feedback from the Sous Chef
*Ensure a daily clean day is performed in your allocate area
*To take your allocated break (not between 12pm and 2pm)
*Attend training sessions, meetings and performance reviews as required

*To complete basic food Hygiene
*To comply with all Health and Safety at work, COSHH, and Manual Handling regulations
Please note, the hours of work are Monday - Saturday 8am - 5pm and Sunday 8.30am - 4.30pm. The shift works on a 10 day fortnight working alternate weekends.
